Hello Kitty & Jelly Doughnut Muffin's!

Well, well and well! This little critter just had to help while I enjoyed the warm sunshine on my porch. I decided to re-pot my house plants. They needed a little pick-me-up and some plants had outgrown their pots, needed a nice little dose of fertilizer, etc. A great springtime activity for me....and our cat.

Hauled all my house plants out to the porch and dug right in. This was such a good activity as we wait for it to be warm enough to plant our garden. That little event is still weeks away for us. I hear we will be enjoying a little rain and sleet tomorrow...hmmmmm! Now don't my plants look so much better? Yes, they do. Time to sweep and clean-up.
Try this recipe this weekend, if you dare. It is a winner.

Cover up that jelly! Shhhhh! Know one knows what lurks inside-- except you and me!
Bingo! Jelly Doughnut Muffin. The kitchen smelled so good and these were more than divine, hot, right out of the oven. Check out the recipe below. Good eats to you all!
Jelly Doughnut Muffins


Mix the following together....


3/4 cups milk, one egg, 1/3 cup canola oil, and 3/4 cups sugar.

Add in----1 and 3/4 cups flour ( you know I snuck in some oatmeal with the flour...just had to because I love it), 1 and 1/2 teaspoon baking soda, 1/2 teaspoon salt, 1/2 teaspoon nutmeg, and 1/4 teaspoon cinnamon. Mix and fill muffin cups to the 1/2 way point. Pick out your favorite jelly (I used strawberry) and put a heaping teaspoon of jelly on muffin's. Then, cover jelly with more muffin mix...it takes you to the 3/4 mark on the muffin cups, approximately.

Bake at 350 degree's for 20 to 25 minutes.

Now, right when you take your muffins out of the oven, brush them with melted butter. Immediately, sprinkle with cinnamon and sugar.

  4. Ah yes..that cat that won't let you walk up the stairs because it's intertwining herself in and out of your legs for attention. Miss that cat.
