...working on our double chin thanks to a Spicy Zucchini-Pineapple bread yum! (adapted from The Comfort Table by Katie Lee Joel)
3 cups All purpose flour
2 tsp baking soda
1 tsp baking powder
1 tsp salt
1 1/2 tsp cinnamon
3/4 tsp nutmeg
1/4 tsp allspice
1 1/2 cups sugar
3 large eggs
1/2 cup canola oil
2 tsp pure vanilla extract
2 cups grated zucchini
1-8oz can crushed pineapple, drained
1 cup raisins
Preheat overn to 350 degress. Grease a 9 by 5 by 3-inch loaf pan. Mix dry ingredients in a small bowl. In a medium bowl, beat the sugar, eggs, oil and vanilla until well combined. Mix in the zucchini and pineapple. Add the dry ingredients and mix well. Stir in raisins.
Pour the batter into the loaf pan. Bake for 50-55 mins or until a toothpick comes out clean. Let bread cool in pan 5 min then transfer to a wire rack to complete cooling.
(great success..I added a chopped apple in it too, with those spices it was great. So we got a veggie, a fruit, some raisins..all in one! Not too bad!)
